A challenge became
a new way forward.

Tablelands Farm to Fork was established in 2022 when declining cattle prices made the traditional farming model unsustainable. Founded by Barbara, Ainslie, Ray, and Trevor under BART Trading, the family developed a more direct and resilient connection between local farms and customers. This farm to fork initiative has since supported over a dozen farmers in the Tablelands and has inspired related ventures in pet nutrition, natural skincare, and innovative food products like beef tallow.

Trevor, Ainslie, Barbara and Raymond each bring a different strength to BART Trading—from livestock, product development and food safety to production, finance, wholesale and farm operations. Together, they support the connected ventures behind Tablelands Farm to Fork, Farm to Paws, Tallow Cosmetics and FatFork.

Trevor Woodman

Livestock and IT Operations

Trevor played a crucial role in transforming the 2022 cattle market crisis into a sustainable model that supports his family farm and other local farmers. He emphasised regenerative land management and fair pricing for their customers. As the manager of Bauld Ridge Farm, Trevor is responsible for livestock operations and sourcing cattle for other farmers who share similar values. When he’s not working in the paddock, Trevor oversees the IT aspects of the business or engages with customers at a local market.

Ainslie Woodman

Tablelands Farm to Fork Operations / Tallow Cosmetics

Ainslie manages food safety, accreditation, and product development. In a previous chapter of her career as a fine-dining chef, she had the honour of cooking for the late Queen, King Charles, and the rest of the royal family at Windsor Castle. Ainslie has a true passion for creating. She is responsible for the Farm to Paws Chef-Inspired dog food, which has received veterinary approval. When Ainslie is not compiling orders or preparing the new FatFork Beef Cooking Tallow, she focuses on her tallow skincare range, Tallow Cosmetics. This is another of her passions, as she aims to provide clean, sustainable skincare products.

Barbara Woodman

Operations / Finance

Barb comes from generations of farming on the Tablelands. Although she discovered her passion for cattle and sustainable farming a bit later than your average jackaroo, it’s clearly in her blood. Her childhood was filled with experiences involving stud cattle and the kind of “adventures” that often end with someone in need of a Dettol wash. Barb heads up production for Farm to Paws and manages customer relations. When she is not cooking in the kitchen or staying busy, Barb ensures that all the financial records are up to date, which can be challenging with Ray and Trevor going off on spending sprees.

Raymond Barrett

Wholesale Operations / Meat Production

Raymond has a green thumb and the patience to literally watch grass grow. He oversees bulk orders, shipping, and production while keeping the team motivated and level-headed. No task is too small for him, and he often resolves issues to ensure everything runs smoothly. When Raymond isn’t in the butcher shop or out sourcing stock, you can find him hard at work on ALCABASH Farm, herding cattle, assisting with calving, or fencing. Together, Raymond and Barb embody the Aussie version of “The Good Life” — though with more mosquitoes and the occasional runaway steer.

What began as a response to falling cattle prices became a broader commitment to stronger farms, healthier land and better use of every valuable resource. The result is a connected family of businesses with a clear regional purpose.

  1. 2022 — A make-or-break momentFarmers were receiving less than production costs while retail meat prices remained high, creating the need for a different model.
  2. More than a dozen farmers supportedTablelands Farm to Fork has helped local producers build greater stability while supplying quality grass-fed beef.
  3. Land and biodiversity recoveringPreviously overgrazed country is returning with diverse grasses, legumes and clover, alongside birds, butterflies, dung beetles and other wildlife.
  4. Community beyond the farm gateAfter Cyclone Jasper, the team donated meat to people in need and continues supporting local charities, events and animal welfare organisations.
